Four Classic Ways to Savor Sea Salt

  • Crown warm breads, pastries, or simple snacks with a delicate, whisper-crisp finishing salt.

The Salty Dog

A brisk, nautical refreshment long favored by seafarers and shore-dwellers alike

Ingredients
  • Sea salt
  • Grapefruit slice
  • Ice
  • 1 1/2 oz vodka or gin
  • 4 oz freshly pressed grapefruit juice, strained if preferred

Method

Spread a small mound of sea salt upon a plate. With a fresh wedge of grapefruit, moisten half the rim of a sturdy rocks glass and gently dip the glass into the salt. Set the grapefruit aside for garnish.

Fill the prepared glass with ice. Add the vodka or gin, then pour in the grapefruit juice. Stir with unhurried ease until well mingled. Adorn the drink with the reserved slice of grapefruit and serve forth.

Sea Foam Cocktail

A refined coastal libation crowned with ethereal, briny foam

Simple Syrup
  • 1 cup water
  • 1 cup sugar

In a small saucepan over medium-high flame, combine water and sugar. Bring to a quiet simmer, stirring until the sugar has fully dissolved. Allow to cool completely before use. Yields enough for 10–12 cocktails.

Sea Salt Foam
  • 2 oz liquid egg whites (about two whites)
  • ½ oz lemon juice
  • ¼ tsp sea salt

In a mixing bowl, combine the egg whites, lemon juice, and sea salt. Beat vigorously until soft peaks form. The added lemon keeps the foam from stiffening too much, allowing a bit of liquid to settle beneath. Reserve while preparing the cocktail. Makes enough to crown 2–3 drinks.

To Assemble the Cocktail
  • 2 oz gin (Hendrick’s Neptunia recommended)
  • 1 oz simple syrup
  • ½ oz lemon juice
  • Dried seaweed, for garnish

Add gin, simple syrup, and lemon juice to a shaker. Pack with ice, seal, and shake briskly for 10–15 seconds. Strain into a chilled coupe. Spoon a gentle crest of sea-salted foam atop the drink, finishing with a sliver of dried seaweed if desired.
